This is a craft “single grain” whisky (not a blend), offering a modern and unique interpretation of the complexity and diversity of Irish whisky. The “Double Barrel” Irish whisky from Glendalough Distillery begins its maturation with 3.5 years in re-charred ex-bourbon casks, followed by an 8–12 month finishing period in Oloroso casks from Montilla, using some of the finest Oloroso barrels and working with skilled coopers. The combination of carefully selected casks and expert finishing delivers a rich and complex flavor profile of dark fruits and honey, layered with subtle spice notes. This is a complex yet light and very approachable Irish whisky, with rich depth of flavor that has won international awards. Aroma: rich in dark fruits, cherry, raisins, and figs, alongside floral notes, lemongrass, citrus, and nutmeg. Palate: sweet and smooth, with caramel and butter, honey, peppercorn, dried fruits, maraschino cherries, and brown sugar. Finish: spiced ginger, a hint of almond, and earthy undertones.
