REDEMPTION is a magnificent wine made from 60% Cabernet Sauvignon grapes and 40% Merlot of high quality from an organic vineyard located in Pnei Kedem, south of Jerusalem, overlooking the Dead Sea at an altitude of 930 meters. The grapes were handpicked and underwent a long fermentation process in cool conditions in unique fermentation tanks that allow for maximum extraction of polyphenols. This unique wine was aged for 24 months in French oak barrels, 70% of which are new barrels. After bottling, the wine was aged for an additional 24 months before being marketed. The wine is balanced, rich, and smooth, combining flavors of plums, black cherries, aromatic spices with hints of vanilla. Ramat Hebron Winery is among the first to adopt organic vineyard cultivation along with the expertise of the vintners, Shmuel Kedoshi and Michael Luria from Pnei Kedem. It is recommended to open an hour before serving and pour into a decanter.
